A warming, hearty start to a winter’s day.
45g rolled oats
270ml whole milk
1/4tsp ground cinnamon
1/4tsp ground ginger
pinch of freshly grated nutmeg
1 cup fresh cranberries (or frozen, thawed overnight)
handful walnuts, roasted and chopped into rough chunks
- In a small saucepan, place the oats, spiced and milk
- Bring to a slow boil, stirring constantly until the porridge begins to thicken
- Stir in the cranberries and continue to simmer until the milk has been absorbed by the oats and you have a creamy consistency – if you end up with a stodgy consistency, add a little more milk and mix in well
- Transfer the porridge to a bowl that you have warmed slightly in the over, sprinkle over the walnuts and drizzle with honey. Delicious!
Recipe for 1 person. Health conscious? – you can replace the whole milk with semi-skimmed but the porridge will be a little less creamy.
