Greek Turkey Meatloaf

This Greek-inspired turkey meatloaf is perfect for a light evening meal or lunchtime dish. Delicious served hot or cold, it’s succulent, flavourful, packed with healthy spinach and carb-free. I love eating this al fresco on a summer’s evening, with a side salad and some great bread and olive oil for dipping.

Ingredients

For the meatloaf:

1 medium onion, finely chopped
1 tbsp extra virgin olive oil
1 tsp salt
1/2 tsp freshly ground pepper
1 package frozen spinach, thawed and drained
910g ground turkey
95g almond flour
60ml chicken stock
2 large eggs, lightly beaten
2 tbsp worcestershire sauce
150g crumbled feta cheese

For the Tzatziki sauce:

1 cup (245g) yogurt
1 tbsp fresh lemon juice
1 clove garlic, minced
1/2 medium cucumber, finely diced
1 tsp fresh dill, chopped
1/4 tsp salt

Method:

For the Tzatziki:

  • Combine all ingredients and refrigerate until ready to serve

For the meatloaf:

(Preheat over to 180*c and line an 8″ loaf tin with non-stick paper)

  • Heat olive oil in a large frying pan and sautée onions over a medium heat until translucent
  • Add drained spinach and season with salt and pepper
  • In a large bowl, combine turkey mince with onion and spinach mix, then stir in almond flour, stock, eggs and Worcestershire sauce – mix until well combined
  • Press half the mixture into the bottom of the loaf tin, then crumble over the feta cheese
  • Top with remaining mixture and press down firmly
  • Bake in preheated oven for 1hr – 1hr15m, until cooked through
  • To serve, cut into 1.5cm slices and top with tzatziki sauce
