Green Goddess salad with grilled herb chicken

On these warm Summer evenings, my appetite often wanes. This gorgeous green salad is bursting with flavour and the cooling and zingy Green Goddess dressing is sublime. Enjoy the simple salad alone as a light bite, or top with juicy grilled chicken.

Ingredients:

Dressing:

3 tbsp extra virgin olive oil

juice of 1/2 lime

1 spring onion

1/4 jalapeño pepper

2 tbsp Greek yoghurt

1/2 tsp honey

1 small clove garlic

handful fresh coriander

pinch of rock salt

 

spinach

50g feta cheese

1 avocado

handful almonds

1 chicken breasts

mixed herbs and garlic seasoning

olive oil

black pepper

 

Method:

  • Place all the dressing ingredients in a blender and blitz until smooth, then set aside
  • Toast the almond in a dry pan over a medium heat until lightly golden
  • Season chicken breasts with herb and garlic mix
  • Heat 1 tbsp olive oil in a skillet on a medium heat and fry chicken until cooked through, turning half way through
  • Roughly chop several generous handfuls of spinach and divide between two plates
  • Dice the avocado and add half to each plate
  • Crumble over feta and sprinkle over roughly chopped almonds
  • Once cooked, slice the chicken breasts and place on salad
  • Drizzle over dressing and season with black pepper
