Black Forest pancakes

Black Forest pancakes



135g plain flour

1 tsp baking powder

1/2 tsp salt

1 tbsp caster sugar

130ml milk

1 large egg

flavourless oil


frozen Black Forest fruits (cherries, blackberries, blackcurrants, grapes)

Greek yogurt



(place a clean, dry tea tower folder in half on a large plate)

  • Sift together the dry ingredients in a large mixing bowl
  • In a jug, whisk the egg into the milk until completely combined
  • Make a well in the centre of the dry ingredients and gradually pour in the egg and milk mix, whisking constantly until all is incorporated
  • In a large skillet, heat a little oil and, in batches, drop small ladlefuls of the batter into the pan, well spaced apart
  • Once bubbles appear on the surface of the batter, flip and cook for a further 30-40 seconds on the other side, until well-risen and cooked through
  • Place cooked pancakes between the folder tea towel to keep warm
  • Take 1/2-1 cup of frozen fruits per person and place in a microwaveable bowl, or saucepan. Either heat in the microwave or over a low heat on the stove, until warmed through and the juices have formed a sauce
  • Place 3-4 pancakes on each plate and top with a couple of spoonfuls of Greek yogurt, the warmed Black Forest fruits and drizzle with honey

Pancake mix makes enough for 5-6 people – freeze and leftovers
