BBQ turkey and pulled chicken stew

This stew is sweet, rich and tomatoey, packed full of brightly coloured veg, tender chicken and soft butter beans – a great winter warmer with a Southern American twist.


1lb turkey thigh mince

3 medium chicken breasts, cooked and shredded (use two forks to pull the meat apart)

1 400g tin butter beans

1 325g tin sweetcorn

1 tbsp olive oil

1 large onion, finely chopped

1/2 green bell pepper, finely chopped

1/2 red bell pepper, finely chopped

2 400g cans chopped tomatoes

1/5 cup BBQ sauce

few springs of fresh thyme

salt and white pepper, to season

chicken broth, as needed

mange tout, to serve

baby potatoes, to serve


  • heat olive oil in large skillet and brown turkey mince, then set aside
  • add a little more olive oil and sauté onion and bell pepper with fresh thyme until softened
  • return turkey to the skillet, along with shredded chicken, tinned tomatoes and BBQ sauce
  • season with salt and pepper and bring to a simmer
  • add beans and sweetcorn, and warm through
  • add a splash of chicken stock, and simmer on a low heat for half an hour to thicken – add more stock as required (alternatively, transfer to a casserole dish and put in the oven pre-heated to 160*c for an hour)
  • serve with boiled baby potatoes and mange tout
  • season again to serve
